Depends on what image editing software you are using. Normally the term for this is "desaturate". Look for "desaturate" in an edit menu or mode menu.
In Photoshop for example, it's in the Image menu under adjustments.
In the Preview application (Mac) it's under tools/adjust color and then there's a saturation slider.
Every program has it's own menu structure but can do pretty much the same task.
